A Berry Good Cake

Hey Honey Faces. In the spirit of saying goodbye to Summer gradually, a bitch made Strawberry Cupcakes. These were a bit of a mess for me for two reasons. 1, I suck at making frosting for some reason, please see sad photos at the end of the post. 2, I’m terrible at making things pretty. So, there were some unfortunate events that transpired, but not as a result of my mad baking skills. It’s just that shit in certain aspects but hey, I’m human and this is just something that we need to work through, right?

What’s in this mother sucker

1 cup chopped strawberries

1 tablespoon water

1 1/2 cups cake flour

2 tablespoons corn-starch

2 teaspoons baking powder

1/4 teaspoon salt

1/2 cup (4 ounces or 8 tablespoons) unsalted butter, softened

3/4 cup + 1 tablespoon granulated sugar

1 egg, room temperature

2 egg whites, room temperature

1/2 teaspoon vanilla extract

1/4 cup whole milk, room temperature

3-5 drops red food colouring (optional)

Let’s make this sucker

Preheat oven to 180C. Line a cupcake pans with 12 paper liners.

In a medium saucepan, add 3/4 cup strawberries, water, and 1 tablespoon sugar. Bring to a boil, stirring occasionally. Boil until strawberries cook down to a thick paste. Remove from the heat and cool at least 15 minutes.

Once cool, add milk and 2 odd drops of red food colouring, if desired, into the strawberry paste. Leave on the side.

In a large bowl, sift together the flour and corn-starch then stir in the baking powder and salt.

In another large bowl, cream butter and sugar until pale creamy. Beat in the egg and egg whites, one at a time, until mixed in then add the vanilla.

Add the flour mixture alternating with the milk, adding the flour in 3 additions and the milk in 2 additions.  Mix until just combined, be careful to not overmix as air will be knocked out.

Divide the batter among the paper liners and bake 18-20 minutes or until a toothpick inserted in the centre comes out clean. Cool completely.

Uhmmmmmmmm, soooooooo?

Ok, so as you can see, these is no frosting recipe. I won’t lie to you, I COMPLETELY fucked it up. Like, it was a flaming hot disaster. Sister 1 of 3 always gives me hell about it, she always has to come in and save the day, this is my greatest weakness. So sorry guys, I can’t give you a solid trusted recipe as I don’t have one. I shan’t be a liar. Ok, that’s over, back to the good stuff.

This thing was nice guys. I think I could have added more strawberries, like two odd cups. It was really light and fluffy, on the first day. Bake and eat on the same day, for some reason the fluffiness shelf life is low here, I think its because of the strawberries but I will have to investigate.

If you are going to refrigerate these suckers, then you will have to douse them in simple syrup. It will moisten them right up.


I have a few ideas on how I’d like to tweak this recipe, but we will cross that strawberry bridge when we get there.
